Breakfast Thyme: Baked Apple Oatmeal



yields 6-7 servings



3 cups rolled oats (use gluten free if necessary)

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup pure maple syrup (or agave syrup or coconut sugar)

2 cups Almond milk (or use milk of your choice)

2 large eggs

3 tablespoons coconut oil, melted

1 1/2 teaspoons vanilla extract

1 1/2 teaspoons cinnamon

zest and juice of 1/2 lemon

1 cup of peeled and diced apples



  1. Preheat oven to 350 F and lightly spray a 9×13 baking pan or individual ramekins.
  2. In a large bowl, whisk together the eggs, melted coconut oil, vanilla extract, maple syrup, lemon zest and lemon juice until combined. Whisk in baking powder, cinnamon, and salt. Stir in oatmeal and milk until combined. Gently fold in the apples to combine.
  3. Pour oatmeal mixture into prepared pan and spread evenly.
  4. Bake in preheated oven for 35-40 minutes or until top is golden and the oat mixture is set. Remove from oven and allow mixture to cool slightly prior to serving.
